Kitty Bakes Peppermint Mocha Cupcakes (As Seen in MKE Lifestyle Magazine)


Episode 37 – Kitty bakes up some festive Peppermint Mocha Cupcakes! These cupcakes taste just as good as the drink at the coffee shop but in a much better form, CUPCAKE! This recipe was featured in MKE Lifestyle Magazine in their annual foodie issue, and we cannot say thank you to them for featuring Kitty in this issue! Cupcake Ingredients

1 cup butter
1 cup coffee
1 teaspoon instant coffee
¾ cup cocoa powder
2 cups flour
2 cups sugar
1 ½ teaspoon baking soda
¾ teaspoon salt
2 eggs
⅔ cup sour cream

Frosting Ingredients

2 cups butter, softened
1 teaspoon vanilla
1 teaspoon peppermint extract
3 cups powdered sugar
2-4 teaspoons heavy cream

Preheat oven to 350 degrees.

In a medium saucepan, melt butter, add in coffee, instant coffee and cocoa and whisk to combine. While the mixture cools, mix together flour, sugar, baking soda and salt.
Beat together eggs and sour cream. Temper the chocolate mixture with the sour cream and egg mixture, then whisk together. Add this into the flour and sugar, and beat together for 2 minutes.

Portion the batter into cupcake tin, filling cups ¾ full and bake for 17 minutes. Remove from the oven when a toothpick comes out clean, and allow to cool.


Beat butter until smooth and creamy, add in vanilla and peppermint extract. Beat to combine. Add in powdered sugar one cup at a time, adding a tablespoon of cream to keep it smooth. Pipe frosting onto the cupcakes and top with crushed candy canes.
